The surface is bumpy and the volume of the batter should double during baking. This causes the scone to puff and be more tender. Loved this recipe - goes together quickly, and produces great results. LOL Enjoy cheese scones by itself or with gravy and have plain scones with jam or marmalade. It works as the author intended, which is a shaggy, mostly mixed dough you press into a muffin tin and then top with a slice of butter. I love the rustic look of spoon dropped dough for my scones, although this last time I was probably one spoonful of yogurt too soft.... they were slightly more rounded versus standing up a bit.
